For almost all of human history, the main problem with food was getting enough of it. It took effort to grow, hunt, and prepare, it cost real money, and it ran out. Those limits were not a lifestyle choice, they were the environment, and they quietly capped how much anyone ate. In a single lifetime, that environment flipped. Food is now everywhere, at every hour, in enormous variety, for very little money and almost no effort. We did not evolve for that, and the flip changed our eating far more than any personal failure of discipline ever could.

Every one of those was a natural brake on intake, not because anyone was dieting, but because that was simply how the world worked.
Now consider today. Shops open around the clock, food delivered to your door in minutes, ready meals that need no cooking, drive-throughs, vending machines, and snacks at every checkout. Real food prices fell while portions grew. The brakes did not just loosen, they were removed. And here is the crucial part: our appetites, tuned over millennia for a world of scarcity, never got the memo. We still eat like food might run out, in a world where it never does.
The supply exploded
You can see the flip in the raw numbers of how much food is available per person. Researchers estimated how the food energy supply changed over recent decades and compared it with the weight people actually gained. The finding was striking: the rise in available food energy was, on its own, more than enough to account for the population's weight gain. In the US, adults were estimated to be taking in on the order of 500 extra calories a day compared with the 1970s, tracking the growth in supply.
The debate about whether obesity is mainly about eating more or moving less has a clear lean here. The extra food alone was enough to explain the weight gain. That does not make movement unimportant for health, but it points the spotlight at how much the food environment pushes us to consume.
Widen the lens to the whole planet and the same story appears. The near-universal rise in obesity across very different countries lines up with a changed global food system, one producing more processed, more affordable, and more effectively marketed food than at any point in history. When a trend shows up almost everywhere at once, the cause is unlikely to be millions of individuals independently losing their self-control. It is far more likely to be the shared environment they all now live in.
How constant availability changes behaviour
Availability does not force anyone to eat. It works more quietly than that, through cues and convenience. Human appetite is highly responsive to the sight and smell of food and to how easy it is to get. When food is always visible and always within reach, those cues fire constantly, and each one is a small nudge to eat that has nothing to do with genuine hunger. Multiply that across a day full of screens, shops, and snack drawers and the nudges add up.
Convenience matters just as much as visibility. Every bit of effort between you and food, having to cook it, walk to get it, or wait for it, cuts how much of it you eat. Remove the effort and you remove the brake. This is why the same person can eat very differently in two different environments without any change in their character. Put easy, tasty food everywhere and consumption rises. Add a little friction and it falls. The behaviour follows the surroundings.

It is not only how much, but what
The surplus is not neutral in what it is made of. A large share of the food that filled the world is ultra-processed, meaning industrially formulated products built from refined ingredients and additives, designed to be cheap, shelf-stable, and extremely easy to eat quickly. These foods are not just abundant, they are engineered to be over-consumed, and the evidence suggests they succeed.
In a tightly controlled trial where meals were matched for calories, sugar, fat, salt, and fibre, people eating an ultra-processed diet took in about 500 calories a day more than when they ate minimally processed food, and they gained weight. They were not told to eat more and did not report feeling more full. The food itself drove the difference. So the endless availability problem is really two problems stacked together: more food, and more of it built to make you eat past your needs.
Blaming yourself for eating more in a world engineered to make you eat more. The environment changed, not your worth or willpower. Seeing it clearly is not an excuse, it is the first step to designing around it instead of losing to it every day.
Redesigning your own environment
You cannot roll back the global food system, but you have real control over the small environment you actually live in: your kitchen, your desk, your bag, your route home. Since behaviour follows surroundings, changing the surroundings is far more reliable than relying on in-the-moment willpower. The aim is to add friction to easy overeating and remove friction from good choices.
- Curate what is in the house. The single biggest lever is what you keep within reach. Stock filling whole foods, fruit, vegetables, legumes, dairy or plant alternatives, and keep tempting, easy-to-overeat items out of the house rather than trying to resist them daily.
- Make the good option the convenient one. Prep fruit and vegetables, batch-cook meals, and keep a filling snack ready. When the healthy choice is the easiest choice, you use far less willpower.
- Add friction to autopilot eating. Keep snacks off the counter and out of sight, do not eat straight from packets, and put the crisps somewhere that takes a deliberate effort to reach. Small hurdles cut a lot of mindless intake.
- Decide meals in advance. Planning what you will eat, even loosely, means fewer choices made while hungry and surrounded by cues, which is when the environment wins.
Endless availability, not weak character, is why we eat more than we did. You cannot change the world's food supply, but you can design your own corner of it so that the easy, visible, convenient option is the one that serves you.
