Almost everything you eat is processed in some way. Freezing peas is processing. So is milling flour, fermenting yoghurt, and salting fish. Treating all of that as one villain is where the confusion starts, because it lumps a tin of chickpeas in with a neon energy drink. The term that actually predicts problems is narrower: ultra-processed. It describes a specific kind of industrial product, not the mere fact that a food went through a factory. Once you can tell processed from ultra-processed, the food label stops being a wall of noise and starts telling you something useful.
The short version
- The most-used system, called Nova, sorts food into four groups by how and why it was processed, not by how many calories it has.
- Processed foods are simple: a whole food plus salt, sugar, oil or fermentation. Think cheese, tinned beans, smoked fish, or fresh bread.
- Ultra-processed foods are industrial formulations built largely from extracted substances and additives, with little whole food left in them.

The word processed does too much work
When a food is called processed, people hear packet, factory, and unhealthy all at once. But processing just means something was done to a food between the field and your plate. Chopping, freezing, canning, fermenting, milling, and cooking are all processing, and most of them make food safer, cheaper, or last longer. A bag of frozen spinach is more processed than a fresh bunch and often just as nutritious.
So the real question is not processed or not. It is what kind of processing, and why. That is exactly what the Nova system was built to answer. Developed by researchers led by Carlos Monteiro, it groups foods by the nature and purpose of their processing rather than by their nutrient numbers. It is the framework behind almost every headline you have read about ultra-processed food, so it is worth knowing in plain terms.
The four groups, plainly
Nova splits everything into four groups. Most of the confusion clears up the moment you can place a food in the right one.

Groups 1 to 3 are all foods you could roughly recreate in a home kitchen. Group 4 is defined by ingredients and processes that only exist in a factory. That single distinction does most of the work.
Processed versus ultra-processed: the actual line
A processed food, in group 3, is still recognisably built from a whole food. Tinned tomatoes are tomatoes and salt. Cheese is milk, salt, and cultures. Bread is flour, water, yeast, and salt. The processing is real but simple, and the food it started from is still the main event.
An ultra-processed food, in group 4, is a different animal. It is a formulation, assembled mostly from cheap extracted fractions of foods, such as refined starches, protein isolates, and industrial oils, then made palatable and shelf-stable with additives that have no culinary use at home. The original whole food, if there was one, is often a minor ingredient by the time the product reaches you.
The tell-tale ingredients
You rarely need a lab. The ingredients list gives it away. Look for the markers of a formulation designed for craveability and long shelf life, the things you would never buy to cook with at home.
- Cosmetic additives: flavourings, flavour enhancers, colours, and non-nutritive sweeteners.
- Texture agents: emulsifiers, thickeners, stabilisers, humectants, and bulking agents.
- Extracted fractions: high-fructose or glucose-fructose syrup, invert sugar, hydrogenated or interesterified oils, protein isolates, and modified starches.
- A long list overall, with several items you cannot picture as a food in their own right.
The line can blur. A wholemeal loaf from a bakery is a processed food, but a long-life sandwich loaf with emulsifiers and preservatives is technically ultra-processed, even though both can be perfectly reasonable choices. Category is a starting point, not a verdict on every single item.
How to spot ultra-processed at a glance
You do not need to memorise the four groups in the supermarket. A quick reading habit gets you most of the way.
- Read the ingredients, not the front. The front of the pack is marketing. Flip it over and read the actual list, in order of quantity.
- Count the strangers. If you hit several ingredients you would never keep at home, such as emulsifiers, isolates, syrups, or colours, you are almost certainly holding an ultra-processed product.
- Find the real food. Ask where the whole food is on the list. If tomato, oat, or chickpea is near the bottom behind starches and additives, the whole food is a bit-part player.
- Do not panic, just notice. The point is awareness, not fear. Knowing what something is lets you decide how often it belongs in your week.
Why the line matters, and where it blurs
This is not just taxonomy for its own sake. In a tightly controlled trial, people ate about 508 more calories a day on an ultra-processed diet than on a minimally processed one, even though the two diets were matched for sugar, fat, salt, and fibre. They were not choosing to overeat. The ultra-processed food was simply softer, more calorie-dense, and faster to eat, so more went in before fullness caught up. That is the practical reason the category earns its own name: these foods are engineered in ways that make overeating easy.
Across large populations, higher ultra-processed intake also tracks with worse health. An umbrella review pooling data from roughly ten million people found consistent links between high consumption and outcomes like heart disease and early death. These are associations, not proof that every packet causes harm, but the signal is broad and repeated.
The ultra-processed group is enormous and mixed. When researchers split it apart, sugary drinks and processed meats looked clearly worse, while ultra-processed wholegrain breads, plain yoghurts, and some plant-based products looked neutral. So the smart target is not zero ultra-processed food, it is fewer of the worst offenders and more whole and simply processed foods.
Put simply: do not fear the tin of beans, the block of tofu, the cheese, or the wholemeal loaf. Those are processed foods that make a whole-food diet cheaper and easier. Save your attention for the group 4 formulations that are hardest to stop eating, and let the rest of your plate be built from foods that still look like foods.
