If you have ever finished a family bag of crisps or a sleeve of biscuits and felt genuinely surprised, you were not being weak. You were doing exactly what the food was built to make you do. For years the standard explanation was that people who overeat processed food simply lack discipline. Then a carefully controlled experiment fed people two diets that were matched for calories, sugar, fat, salt, and fibre on the plate, and let them eat as much as they wanted. On the ultra-processed diet they ate hundreds of calories more a day, and they gained weight. The difference was not the person. It was the food.

This is design, not weakness
Ultra-processed foods are industrial formulations built from refined ingredients and additives: think packaged snacks, mass-produced breads, sugary cereals, ready meals, fizzy drinks, and most confectionery. They are engineered to taste good, cost little, and sell well. Being easy to overeat is not an accident of that process, it is close to the point of it.
The honest framing matters, because blaming yourself keeps you stuck. If the problem is your character, the only fix is trying harder, which rarely lasts. If the problem is partly the food, you can change the food environment around you and let that do some of the work. That is a far more durable strategy than white-knuckling past a cupboard full of things designed to be finished.
You are not competing on a level field. These foods are the product of decades of refinement aimed at getting you to eat more. Treat overeating them as an expected response to good engineering, not a personal failing.
The experiment that settled the argument
In 2019, researchers ran an inpatient trial where 20 adults lived in a research unit and were fed, for two weeks each, an ultra-processed diet and a minimally processed diet. The clever part was the matching. Both diets offered the same calories, and the same amounts of sugar, fat, salt, fibre, and macronutrients on the plate. People could eat as much or as little as they liked at each meal.
On the ultra-processed diet, people ate about 500 calories more per day and gained roughly 0.9 kilograms in two weeks. On the minimally processed diet, they lost about the same. Same person, same offered nutrition, opposite result. Because everything on the plate was matched, the extra eating had to come from something about the processing itself, not just the sugar or fat content people usually blame.
This was the first randomised controlled trial to show ultra-processed food causing overeating under tightly controlled conditions. Everything before it was observational and could be waved away as correlation. This could not.
It is worth being clear about what the trial does and does not prove. Twenty people over two weeks each is a small, short study, so the exact 500-calorie figure is not a fixed law. What it does establish is direction and mechanism: when you remove the usual excuses by matching the diets, ultra-processed food still drives more eating. That is the part that reshaped the debate, because it moved the conversation from moralising about weak-willed eaters to asking what, specifically, the food is doing.
Why the calories slip in unnoticed
There is no single villain. Several features stack up, and each one nudges you toward eating a bit more before your body catches on.
- Energy density. Ultra-processed foods pack more calories into each gram. A biscuit and an apple can weigh the same while the biscuit carries several times the calories, so a normal-feeling portion delivers far more energy.
- Soft, low-effort texture. Much of this food barely needs chewing. Less chewing means faster eating, and fullness signals lag behind the fork.
- Low protein and fibre per calorie. Protein and fibre are the two most filling parts of food. Many ultra-processed products are light on both, so you can eat a lot before feeling satisfied.
- High palatability. The mix of fat, sugar, salt, and refined carbohydrate hits reward pathways hard, which encourages you to keep going past the point of need.
- Easy portions. They arrive in large, ready-to-eat formats with no natural stopping point, so the bag or box, not your appetite, decides when you finish.
None of these alone would matter much. Together they mean you eat faster, get more calories per bite, and feel full later. That combination is why a snack meant to bridge a gap can quietly become a meal's worth of energy.
Speed is the quiet culprit
Of all the mechanisms, eating rate may be the most underrated. Your gut takes roughly 15 to 20 minutes to tell your brain it has had enough. Eat slowly and that signal arrives while there is still food left, so you stop. Eat quickly and you can pack in a large amount before the message lands.
When researchers looked closely at the trial, people ate the ultra-processed meals markedly faster, roughly 50 percent quicker by energy per minute. Soft, refined food goes down with little resistance, so the meal is over before satiety has a chance to work. It is less about what you decided and more about how fast the food let you eat.

The practical read is encouraging: if speed and density are doing the damage, then slowing down and changing what is within reach can undo a lot of it, without any heroic willpower.
How to eat around it
You do not have to banish every packaged food to eat well. You mostly need to blunt the features that drive overeating and make the filling foods the easy default.
- Anchor meals around whole foods. Build plates around protein and fibre such as eggs, fish, chicken, beans, lentils, tofu, tempeh, wholegrains, fruit, and vegetables. These fill you up per calorie and slow eating down naturally.
- Decant, do not graze from the pack. Put a portion in a bowl and put the packet away. Removing the bottomless container restores a stopping point the product deliberately left out.
- Slow the meal. Put the fork down between bites, add something that needs chewing, and give the 15-to-20-minute fullness signal time to arrive before deciding on seconds.
- Make the default healthier. Keep quick whole-food options within reach, such as fruit, yoghurt, nuts, hummus with vegetables, or a bean-based leftover, so the fast choice is also a filling one.
Change the environment, not just the intention. Fill your kitchen with foods that are filling and slow to eat, and the overeating problem shrinks on its own. The willpower you save can go toward the things that actually need it.
