Building meals that stay level
The practical takeaway is not to fear carbohydrate. It is to choose carbohydrate that still has its fibre attached, and to build meals so the fibre is there to do its job. Whole, minimally processed plant foods do this automatically. Juicing, blending to a smooth liquid, and heavy processing strip or break down the fibre and hand you back the spike.
