Somewhere in the last few years, seed oils went from boring pantry staples to the thing a certain corner of the internet wants you to burn. Sunflower, soybean, rapeseed, and corn oil get blamed for inflammation, heart disease, and general modern ill health, usually in confident videos with very little citation. It is worth taking the claim seriously rather than dismissing it, because a good question hides inside the noise: are these oils, high in omega-6 fat, actually harming us? The honest answer, once you read the research instead of the captions, is calmer and more reassuring than the panic suggests.

What seed oils are, and the actual worry
Seed oils are the everyday vegetable oils pressed or extracted from seeds: sunflower, soybean, corn, rapeseed (canola), cottonseed, and grapeseed among them. What unites them is that they are rich in linoleic acid, an omega-6 polyunsaturated fat. Omega-6 is one of the two families of essential fats your body cannot make, so you have to eat some. The debate is about whether modern diets now contain far too much of it.
The theory behind the fear goes like this. Linoleic acid can be converted in the body into arachidonic acid, which is a starting material for some inflammatory signalling molecules. From there, the argument leaps to the conclusion that eating more seed oil must mean more inflammation, and therefore more chronic disease. It is a tidy-sounding chain. The problem is that each link has been tested, and the chain does not hold up in humans.
A plausible biochemical pathway on a diagram is not the same as an effect in a living person. The body tightly regulates how much linoleic acid it converts, and eating more of it barely moves arachidonic acid levels in the blood.
The inflammation claim, tested directly
This is the heart of the argument, so it deserves the strongest evidence available. A systematic review of randomised controlled trials looked specifically at whether increasing dietary linoleic acid raises markers of inflammation in healthy people. These are the studies where researchers actually change what people eat and measure the result, rather than guessing from food surveys.
The finding was clear. Across the trials, increasing linoleic acid intake had essentially no effect on the main blood markers of inflammation, including C-reactive protein. If seed oils drove inflammation the way the popular story claims, this is exactly where it would show up, and it does not. That is not a fringe result being ignored, it is what the controlled evidence consistently shows.
The 'seed oils cause inflammation' idea sounds scientific because it name-drops real molecules. But it stops at the pathway on paper and skips the step where scientists fed people the oil and measured what happened. When they did, the inflammation did not appear.
What about the heart?
If anything, the evidence runs the other way. Linoleic acid tends to lower LDL (low-density lipoprotein) cholesterol, and the largest pooled analysis of its kind, combining 30 studies from around the world, found that people with higher linoleic acid levels in their blood had lower rates of cardiovascular disease and death, not higher. This is the opposite of what you would expect if seed oils were quietly damaging arteries.
This lines up with the broader fat story. The American Heart Association's review of dietary fats concluded that replacing saturated fat with polyunsaturated vegetable oil, exactly the kind of fat seed oils provide, reduces heart disease. So the mainstream position is not that seed oils are merely tolerable, it is that this type of fat is actively useful in place of saturated fat.

So where does the bad reputation come from?
There is a kernel of truth worth keeping. Seed oils are the fat of choice for deep-frying and ultra-processed food, so intake has climbed alongside the rise of fried and packaged food generally. It is easy to look at that correlation and blame the oil. But the company the oil keeps is the real story.
A large plate of fried food or a diet built on ultra-processed snacks is genuinely worse for you, not because of the linoleic acid, but because of the excess calories, salt, refined starch, and the way these foods encourage overeating. Blaming the seed oil is like blaming the flour in a doughnut. The oil is a passenger, not the driver. Swap a home-cooked meal made with sunflower oil for a takeaway fried in the same oil and the health difference is enormous, and none of it is about the oil.
- Cook at home with whatever oil suits the job. Rapeseed and sunflower oil are fine for high-heat cooking, olive oil for lower-heat and dressings. A mix across your week is a perfectly good default.
- Judge the meal, not the bottle. Fried, ultra-processed food is worth limiting for many reasons. The seed oil in it is the least of them.
- Keep some omega-3 in the picture. The one sensible balance point is making sure you also eat omega-3 sources like oily fish, or flax, chia, walnuts, and algae oil if you eat no fish, rather than getting fat almost entirely from omega-6.
- Ignore the fear-based marketing. 'Seed-oil free' on a snack package is a selling point, not a health guarantee. Read the whole label, not the buzzword on the front.
